Pacas is a natural mutation of the Bourbon variety, first discovered in El Salvador.It was introduced to Honduras by IHCAFE in 1974. The variety shows slightly better resistance to coffee leaf rust compared to typical Bourbon, and its compact growth makes it well-suited for cultivation.
This batch of washed Pacas was grown at 1,800 meters above sea level and harvested in May 2025. After 24–30 hours of fermentation, and dried for about 25 days until reaching the moisture content.
